(Makes 2 medium pizza)



Pizza Dough

2 teaspoons active dry yeast

1/2 teaspoon Manuka Royale Honey

1 cup (250ml) warm water

2 1/2 cups (375g) High Grade Flour

1 teaspoon salt

2 tablespoons olive oil



4 tablespoons fresh basil pesto

1 cup smoked ham, chopped

250g fresh mozzarella cheese, torn

1 cup walnuts, crushed

2 teaspoons Manuka Royale Truffle Honey

2 handfuls of fresh rocket

Olive oil

Salt and pepper



Place the yeast, water and honey in a small bowl and mix to combine. Allow the yeast to activate in a warm place for 5 minutes until bubbles appear on the surface.

Place the flour, salt and olive oil in a large bowl and add the yeast mixture. Mix together well to form a dough.

Turn out onto a floured surface and knead for 5 minutes until the dough is smooth and elastic.

Divide in half and lightly oil the surface of the dough.

Place a cover over the dough and allow to rise a warm place for 30 - 60 minutes until the dough has doubled in size.

Pre-heat the oven to 250ºC fan bake.

Press the dough out on a slightly oiled pizza tray.

Spread the pesto around the base and then sprinkle on smoked ham and walnuts.

Dot mozzarella around the pizza and season with salt, pepper and a drizzle of olive oil.

Cook in the oven for 10-15 minutes until sizzling and golden.

Drizzle Manuka Royale Truffle honey over the pizza and top with fresh rocket.
